I often make shakes for me and Eric, and although some are pretty indulgent, I like some to be nutrient filled as well, which is exactly why I made a Chocolate Mint Kale Shake last week. I got the idea from the fact that I add spinach to everything dessert needing to be colored green, and I thought, why not use a big bunch of kale that I happened to have on hand! I could make it minty and delicious, get my kale nutrients for the day, and have a filling snack!
I used a banana base, added some hempseeds for protein, and sweetened it with stevia to keep it sugar free. I made half of it just mint, and half chocolate to create a fun layered smoothie that tasted pretty darn amazing and me and Eric polished it off fast. It tasted so good I would have never guessed it had bananas, kale and hempseeds had I not made it myself. I bet if you made this for kids, you could get some greens into them without them ever knowing, and that is the beauty of it! Not that I don't love my greens...because I ate a big salad afterwards as well.
6 frozen bananas, cut into chunks
1 bunch fresh kale
1/4 cup hempseeds
1/2 cup fresh coconut water or hemp milk
2 tsp pure vanilla extract
1 tsp peppermint extract (or a bunch of fresh mint if you have it)
stevia to taste (or your choice of sweetener)
1/4 cup raw cacao powder
In a high speed blender, combine the bananas, kale, hempseeds, coconut water, vanilla, peppermint, and stevia. Blend until smooth, using the tamper to press the ingredients into the blade (it will be thick, if you prefer it thinner, use more coconut water). Pour half the mixture into 2 glasses, then to the remaining mixture in the blender, add the cacao powder and blend until smooth. Add to top off the two glasses and enjoy!
